New Chief Medical Officer Named for Culinary Health Institute

4Roots appoints Dr. Monica Aggarwal as Chief Medical Officer for the Culinary Health Institute (CHI).

Winter Park, Fla. – Jan. 17, 2022 – 4Roots appoints Dr. Monica Aggarwal as Chief Medical Officer for the Culinary Health Institute (CHI). Dr. Aggarwal will be responsible for developing and implementing the mission of CHI with a focus on clinical application, nutrition research, and education.

John Rivers is so excited to welcome Dr. Aggarwal to the 4Roots family. “I am beyond ecstatic to have Dr. Monica Aggarwal as a part of our 4Roots team. Her passion for and expert knowledge of health through food will be a key part of building the educational centers on our Farm.”

In addition to Dr. Aggarwal’s work with CHI, she is a holistic cardiologist and Associate Professor of Cardiology at the University of Florida. In this role, she conducts research on nutrition education in medical institutions and on how a plant-based diet impacts cardiovascular disease. In her clinic, she emphasizes plant-based nutrition and often performs multiple mind-body techniques with her patients, including yoga and meditation. Dr. Aggarwal frequently presents her work in educational talks in her local community and around the country.

Dr. Aggarwal is board certified in cardiology, echocardiography, nuclear cardiology, and advanced lipidology. She is also a Fellow of the American College of Cardiology (ACC), where she is a member of the nutrition council working on nutrition policies for the nation. She received her Medical Degree from Virginia Commonwealth University School of Medicine and completed her residency at Tufts-New England Medical Center. She then went on to complete a cardiology fellowship at the University of Maryland.

Dr. Aggarwal’s work is often featured in world-renowned publications such as Veg News, Naked Magazine, forksoverknives.com, and Cardiology Today, where she was named “Next Generation Innovator”. She has been published in major medical journals such as the Journal of American College of Cardiology and the American Journal of Medicine.
