Through future on-campus greenhouse research, CHI will aim to create a healthier, more accessible food system that supports the well-being of people and the planet by advancing innovative and sustainable growing methods. CHI explores how different farming techniques affect the nutritional value and quality of food.

Patients with chronic conditions are able to purchase harvest boxes that are specifically customized with fresh produce to aid their particular recovery needs and improve health outcomes. These boxes are especially valuable for those managing health conditions where nutrition is essential to treatment like heart disease, cancer, and diabetes.

Through partnerships with local and global institutions, CHI offers a unique opportunity for future healthcare providers to gain hands-on experience in dietary interventions to deepen their understanding of nutrition’s impact on health, shifting the focus of healthcare toward preventative medicine.

CHI culinary classes aim to create a foundation for lifelong wellness by inviting people from all backgrounds to learn the art of preparing nutritious, delicious meals for everyday life. We’re advancing patient-centered research and building resources, including a Phytonutrient Data Vault, a Nutrient Dense Breeding initiative, Diet-to-Microbiota studies, and a National Data Repository to better understand the connection between food, health, and healing.
The Culinary Health Institute is equipping both professionals and the public with practical, evidence-based knowledge, offering CME courses, culinary classes, curriculum development, national conferences, and published research to drive meaningful change in how we understand and apply food as medicine.
We work to shape policy and systems change by lobbying for federal Farm Bill and state-level Medically Tailored Meals (MTM) to advancing APR requests, aligning key stakeholders, and serving as a trusted certification source for food-as-medicine initiatives.
